Mediterranean Cucina & Amore Quinoa Salad

Cucina & Amore Basil Pesto Quinoa Meal not only recalls the tastes of Italy, but provides a vitamin-packed alternative to pasta for those with a gluten intolerance. You can make it Greek by adding some feta cheese, olives, and artichoke hearts.

Ingredients:

  • 1 package of Cucina & Amore Basil Pesto Quinoa meal
  • 4 oz of Cucina & Amore Grilled Marinated Artichoke Halves
  • 4 oz of cherry tomatoes
  • 4 oz of kalamata olives
  • ¼ cup of feta cheese crumbles
  • Juice from half of a lemon

Directions:

  1. In a medium sized bowl, place the already-cooked quinoa and basil pesto from the Quinoa Meal
  2. Cut cherry tomatoes in half.
  3. Lightly salt and pepper the tomatoes and set aside with the feta cheese crumbles.
  4. Roughly chop the olives and the artichokes. Mix together with the cherry tomatoes and feta cheese
  5. Add all ingredients with lemon juice to a bowl and toss together until well mixed.

Ingredients:

  • 1 cup of roasted chicken
  • ½ of an avocado, cubed
  • ½ of a juiced lime

Directions:

  1. Cube or shred roasted chicken into bite-size pieces and set aside in a bowl.
  2. Cut avocado in half and remove core. Spoon out one half of the avocado and cut into bite-sized cubes.
  3. Add to the bowl of chicken.
  4. Drizzle lime juice over chicken and avocado cubes. Season with salt and pepper.
  5. Mix in Cucina & Amore Mango & Jalapeno Quinoa Meal with chicken and avocado, and enjoy!

Ingredients:

  • 1 package of Cucina & Amore Artichoke & Roasted Peppers Quinoa Meal
  • 1 teaspoon of Cucina & Amore Fruttato Extra Virgin Olive Oil
  • 1 cup of spinach
  • 1 cup of chopped mushrooms

Directions:

  1. In a small pan, add olive oil and heat over medium-high heat.
  2. Add chopped mushrooms and brown until cooked through, about three minutes.
  3. Season with salt and pepper and set aside.
  4. In the same pan, add the spinach and cook until wilted, about 2 minutes.
  5. Remove from heat and place spinach in a paper towel or colander.
  6. Press to remove excess juices and roughly chop.
  7. Place the Cucina & Amore Artichoke & Roasted Peppers Quinoa Meal in a bowl, toss all ingredients together.
  8. Optional: add crumbled goat cheese for a creamy addition!
