Pesto Chicken Quinoa with Zoodles

Have you ever experimented with food in your fridge? I bought a few items thinking, “oh yeah, I’ll totally make this!” Then it never sounds good to eat when it’s just sitting in your fridge waiting to serve the purpose of why you bought it in the first place. I had some extra ingredients and wanted to change up my Basil Pesto Quinoa Meal. This recipe is the perfect example of recipe experimentation and overall resourcefulness done right!

Serving Size: 1-2
Prep Time: 5-8 minutes
Cook Time: 5-10 minutes

Ingredients:

Basil Pesto Quinoa Meal

Directions:

  1. Cut the chicken breast into cubes
  2. In a skillet, cook the chicken on medium heat until all of the pieces are cooked
  3. With a spiralizer, make the zucchini into zoodles (zucchini noodles)
  4. In a medium bowl, add the quinoa from the quinoa meal, the cooked chicken, and zoodles
  5. Top off with the Pesto from the quinoa meal
  6. Stir until all of the pesto is evenly mixed with the rest of the ingredients
  7. Enjoy!

  1. This looks great!! We don’t eat meat in my house but I’m going to try this with tomatoes instead of chicken.
