Quinoa Breakfast Bites

Quinoa for breakfast? Believe it or not, quinoa is great anytime of the day. Why not start your day off right with a superfood packed with protein and fiber to help you have a super day? This recipe is a savory and spicy breakfast treat that is a nice alternative to an omelet or the regular eggs and bacon. I used the Spicy Jalapeño sauce from the quinoa meal as a topping for the Quinoa Breakfast Bites like frosting on a cupcake. Just another way to enjoy the most important meal of the day!

Serving Size: 1-2
Prep Time: 5-10 minutes
Cook Time: 25 minutes

Ingredients:

8-200-2_C&A-Spicy-jalapeno-&-roasted-peppers

Directions:

  1. Preheat the oven to 375°F
  2. In a medium sized bowl, place the quinoa from the quinoa meal
  3. Heat the quinoa up for about 1 minute in the microwave
  4. Add the mozzarella while the quinoa is still hot and stir
    • Make sure the mozzarella is melted
  5. Add the spinach, egg whites, and garlic
  6. Stir until all the ingredients are combined
  7. Spray a muffin pan with non-stick spray
  8. Place the mixture into the muffin pan
  9. Bake for 25 minutes
  10. Place the quinoa breakfast bites on a plate
  11. Top off the bites with the Spicy Jalapeño sauce from the quinoa meal
  12. Enjoy!
