Piquillo & Artichoke Zoodles

Simplicity is key when it comes to this recipe. It only takes 2 ingredients to help satisfy your hunger and make you feel really good about eating your vegetables too. This recipe is perfect for a hot summer day because the zoodles (zucchini noodles) are cold. No need to heat or bake or squeeze out any extra water. It’s ready in minutes!

Serving size: 1-2
Prep Time: 1-2 minutes
Cook Time: 1-2 minutes

Ingredients:

Directions:

  1. Peel the zucchini (optional step if you don’t like the skin)
  2. Spiralize the zucchini
  3. Add the desired amount of Piquillo & Artichoke Bruschetta
  4. Mix well until all the zoodles are covered
  5. Enjoy!

Suggestions:

  • Add some more vegetables like spinach, kale, or tomato
  • Use another Cucina & Amore Bruschetta
  • Try adding some cheese like feta or mozzarella
