Chicken & Artichoke Quinoa

The best part is that when you do have time to cook, this quinoa meal still comes in handy. All you have to do is add some meat or vegetables and you’ve got yourself another healthy, simple, delicious meal.

This Chicken & Artichoke Quinoa recipe is simple with only 2 ingredients required and is perfect for those that meal prep, especially since the quinoa is already cooked! Take the time out of meal prepping and let Cucina & Amore help you.

Serving Size: 1-2

Prep Time: 1-2 minutes
Cook Time: 8-10 minutes



  1. Heat up a saucepan on medium heat
  2. Add about a tablespoon of olive oil to coat the pan
  3. Open the package of ground chicken breast
  4. Cook the chicken breast until fully cooked
  5. Open the Artichoke & Roasted Peppers sauce from the Quinoa Meal
  6. Add the Artichoke & Roasted Peppers sauce to the cooked chicken
  7. Stir on low heat
  8. Open the quinoa cup from the Quinoa Meal and place it in a medium sized bowl
  9. Top the quinoa with the Chicken and Artichoke & Roasted Peppers mixture
  10. Enjoy!
