Spicy Quinoa Balls

If you like spicy, this is the perfect gluten-free, meatless ball you will ever eat. It is a versatile meal that can be enjoyed all by itself, in a pita or on top of some spaghetti. Carbs on carbs is always an option. This recipe has more ingredients than I usually use to make a recipe but the result is oh so satisfying and delicious.

Serving: 3-6
Prep Time: 10-15 minutes
Cook Time: 30 minutes

Ingredients:8-200-2_C&A-Spicy-jalapeno-&-roasted-peppers

Directions:

  1. Preheat oven to 400°F
  2. Open the quinoa cup from the Quinoa Meal and pour it into a large bowl
  3. Mix the coconut flour, salt, pepper, and garlic powder together
  4. Add the dry mixture to the quinoa and stir
  5. Add the Italian cheese blend, 2 diced sun-dried tomatoes, and 2 egg whites
  6. Stir everything together
  7. Line a baking sheet with foil or parchment paper
    • Just make sure it’s non-stick
  8. With your hands, form 6 quinoa balls
  9. Bake for 30 minutes or until golden brown
  10. Place the cooked quinoa balls on a plate and top with the Spicy Jalapeño sauce from the Quinoa Meal
  11. Enjoy!
