Caprese Quinoa Salad

Have you ever had a good meal, but just by adding a few more ingredients you turned it into a great meal? This is what happened when I thought, “what could make this Pesto Quinoa Meal even more delicious?” Turn it into a Caprese Quinoa Salad.

This Caprese Quinoa Salad is perfect for a lunch time meal or to bring to your next summer get together. It is a yummy alternative to the traditional pesto pasta salad and probably a whole lot healthier too. Making this meal is super fast because the quinoa is already cooked!

Prep Time: 5 minutes

Ingredients:

Directions:

  1. Open quinoa cup from the Pesto Quinoa Meal
  2. Place the quinoa in a medium-sized bowl
  3. Chop the cherry tomatoes in half
  4. Cut 1/2 cup of mozzarella into small bite-sized pieces
  5. Place the tomatoes and mozzarella in the bowl with the quinoa
  6. Open the pesto cup from the Pesto Quinoa Meal
  7. Add as much pesto as you like to the quinoa, tomato, and mozzarella bowl
  8. Stir until the pesto is mixed evenly
  9. Enjoy!
