Mediterranean Flatbread

Artichokes are an acquired taste. They also just happen to be a delicious topping to take the boring to extraordinary. You can add artichokes to salads, sandwiches, pastas, pizza and more! If you haven’t seen any of my other posts, I love artichokes! Here is another recipe to satisfy all artichoke lovers.

This Mediterranean Flatbread recipe is easy to make and gluten free! After experimenting with gluten free pizza crust for the first time, I have determined to call it a flatbread rather than a pizza, but I guess you could also call it a thin-crust pizza.

Serving: 1-2
Prep Time: 10 minutes
Cook Time: 10-12 minutes

Ingredients:

Directions:

  1. Preheat oven to 425°F
  2. Open the package of gluten free crust IMG_0948
  3. Spread pesto evenly onto crustIMG_0949
  4. Add mozzarella cheese thoroughlyIMG_0953
  5. Line a plate with paper towels.
  6. Remove the marinated artichokes from the jar and put onto the paper towel
  7. Use the paper towel to remove all excess oil from the marinated artichokes
  8. Place quartered artichokes onto the flatbreadIMG_0960
  9. Line a plate with paper towels.
  10. Remove the sun-dried tomato from the jar and put onto the paper towel
  11. Use the paper towel to remove all excess oil from the sun-dried tomato
  12. Dice the sun-dried tomato
  13. Add diced sun-dried tomato to the flatbreadIMG_0965
  14. Place the flatbread directly onto the middle oven rack
  15. Bake for 10-12 minutes
