Pesto Gnocchi Recipe

This Pesto Gnocchi recipe is simple with only 2-ingredients that can be left to your chef-like-heart’s desire. Have fun with adding other ingredients like chicken or shrimp. You can even leave it a vegetarian option with vegetables like artichokes, tomatoes, piquillo peppers, and more. You can keep it simple or dress it up. It’s the perfect dish to be creative because you can’t go wrong.

Prep Time: 10 minutes
Cook Time: 2-4 minutes
Servings: 3-4

Instructions

Boil the water in a shallow pan or a small pot. It doesn’t need to be too large but deep enough to see the gnocchi rise.Boiling water

Separate the gnocchi and drop them into the boiling water and cook them for 2-3 minutescooking gnocchi

You know when the gnocchi is cooked when they rise to the top of the waterBoiling gnocchi

Drain the gnocchi or scoop them out with a slotted spoonPlain gnocchi

Mix the gnocchi with pesto sauce or a sauce of your choicePesto Gnocchi

Add the vegetables and/or meat to your Pesto GnocchiChopped veggies

Directions

  1. Boil water
  2. Add gnocchi to boiling water
  3. Let cook for 2-3 minutes Hint: Gnocchi will rise to the top when cooked
  4. Remove gnocchi from water and rinse
  5. Mix with C&A Pesto Genovese sauce
  6. Enjoy!
